Sotavent Restaurant & Central Kitchen of Lotus
This week we have been at l’Escala, a small fishermen’s village located at Alt Empordà, province of Girona, with a huge gastronomic culture around the fish and, specially, because their typical salted anchovies.
In this occasion we have visited “El Sotavent” restaurant, located at the old town of l’Escala and it has more than twenty years working. The customers are habitual to the restaurant and they visit “El Sotavent” because the familiar treatment and its characteristic traditional cuisine, based on Mediterranean gastronomy and the Andalusian roots from its owners. In their menu we can find a large variety of products as rice, fish, meat and also pizza and pasta, satisfying a huge variety of public.
Then years ago they changed their kitchen for a central Linea 90 from Lotus. This change allowed them to cook their entire menu in a single central set which is equipped with stoves, griddles, fryers, pasta cookers and grills. It is a wide kitchen and allows the cook to work with enough space. It also has shelves located under the set that makes easier and faster to take the kitchen utensils.
After many years of service accumulated on this kitchen, we were able to check that the set is working as the first day because the correct maintenance and cleaning. The Sotavent team wanted to transmit us their satisfaction with the kitchen after all this years.
