What is power, really?
Power is a machine’s capacity to generate energy, and it all starts at the burners. Distribution, injectors, the valve, and air pressure are the factors that determine that capacity. In the case of fry-tops, power can vary widely depending on the model: from 3.5 kW to over 38 kW.
But here’s the key question: does more power mean better performance? Not necessarily.
So what is performance, then?
Performance is the speed at which you achieve that heat and the ability to keep it stable throughout service, without drops or cold spots.
And here’s the problem: if you generate a lot of heat but don’t put it to good use, you’re losing energy. And that translates into one thing: higher consumption, both in energy and cost

Design is everything
A machine can consume a lot, but if it doesn’t direct that heat efficiently to where it matters, it won’t perform. That’s why a fry-top’s internal design is decisive for its real efficiency:

- The internal distribution of heat.
- The quality of the components.
These factors determine whether all that generated power translates into results on the plate, or simply gets lost along the way.
